You will need:

225g / 8 oz cranberries
150ml/ 1/4 pint water
75g / 3 oz sugar
Grated rind and juice of one orange
15 ml / 1 tablespoon port.

Method:

Put cranberries in a saucepan and add 50g / 2 oz of the sugar.  Cook gently for 5 - 10 minutes over a low heat.  The cranberries will start to "pop" and form a thick puree.  Add the orange rind and juice and the port and stir well.  Taste and add the rest of the sugar if needed.  Serve hot or cold.
